Chef Florent Poulard serves up authentic and innovative cuisine. Taking pride of place, the vegetables are sourced from local producers. The meat and fish are frequently cooked whole.
I love roasted meat and fish, I care about what I eat and I'm very interested in vegetables and plants.
I've travelled a fair bit. I love Greece, Kalamata olives and Peloponnesian honey. I also regularly go to the Île de Ré to recharge my batteries, where I fish for razor clams with the local salt.
I know everything there is to know about Jalapeño peppers. I love natural environments and the landscapes of Ardèche; my love of sweetened chestnut purée is no secret.
As a true epicurean, I also love wine. I have a very sensitive palate and take care when selecting a bottle.
I believe that great wines are equally good when they are young and old.
I think that biodynamic agriculture is a remarkable production system and I encourage my wine-making friends to adopt its methods as far as possible.
As a man of the terroir, I love fineness, freshness and energy – in short, wines filled with emotion.
