Can you tell us about the cuisine at Le Neuvième Art?

Here we offer cuisine that is full of emotion, with dishes that always surprise our customers. My cuisine is creative and inspired by everything that I was able to learn from leading chefs like Paul Bocuse, Pierre Gagnaire and Régis Marcon. We focus on the quality of the products and come up with modern and artistic recipes. 

What are your à la carte specialities?

Our menu changes with the seasons. At the moment for example we are serving fresh scallops in roasted black pudding on a base of butter and truffle sauce in the style of beaten egg whites. In the summer, we prepare sea bass with asparagus and morel mushrooms. Regardless of what the basic ingredient is, the dish is always a surprise!

How would you describe the gastronomic scene in Lyon? 

Lyon has a great gastronomic culture, with very good restaurants and locals who are real connoisseurs. I believe that it is the city in France where you eat best! Lyon abounds with excellent traditional restaurants like Mathieu Viannay's la Mère Brazier or Guy Lassausaie's restaurant. And then there are also lots of bouchons (authentic Lyon restaurants) like Daniel et Denise, the Café du Peintre or Maison Clovis, which offer great variations of essential Lyon dishes.

How is gastronomy changing?

The new gastronomy has evolved a lot in France over the last 10 to 15 years, with more finesse and more knowledge about the products and techniques. The chefs are increasingly better trained, and the gastronomy is in the process of becoming an extremely complex art.

Where can you enjoy andouillette (made with calf's ruffle) and a quenelle (a creamed meat- or fish-flavoured soufflé)? 
At Daniel et Denise, in the 3rd arrondisement, in Saint-Jean or La Croix-Rousse.

In Vieux-Lyon or Quai Saint-Antoine to admire this magnificent view.
